| Duke's Restaurant & Canoe Club 2335 Kalakaua Ave, #116 Honolulu, HI 96815 (808) 922-2268 3/4/09 Just got off the phone with Gerald, one of the chefs at Duke's. He sounded like a great guy with a positive attitude. He told me that any patron with food allergies should ask for the manager, who will then talk to the kitchen supervisor to make sure the order is handled properly. The staff is trained to take action in these situations. They have an allergy book where the menu items are classified by allergen. (He faxed a couple of pages pertaining to Bud's allergies to me). The kitchen supervisor is trained to know that a section of the grill must be cleaned and re-oiled to handle food allergy orders. Some orders will be cooked in a clean pan. He talked about preventing cross-contamination and even knew that there are eggs in mayonnaise! Gerald is there Monday - Friday, 5a.m. - 3 p.m., and he claims the other chefs are also well equipped to handle our situation. At this time, Duke's is rated #17 at TripAdvisor.com. The Barefoot Bar at Dukes is Auntie D's favorite place to eat in Honolulu. She does NOT have food allergies. They are part of T S Restaurants as is Hula Grill. .32 miles from hotel. |

The woman claimed they have no nuts and the only dairy is mayonnaise on the California rolls which is pre-made. He said that NOT ALL of their chefs understand food allergies, like he does. He's there Monday 5-9:30 pm., Tues 4 - 9:30 pm, Thurs 10-4 pm, Sat & Sun 4-9:30. Chef Eugene is there Friday nights and understands food allergies. He said they don't use any milk, peanuts, or tree nuts in the sushi area. The California roll and the crab salad have mayonnaise. He would be careful not to cross-contaminate, but I'm wondering if there's any risk from other chefs using the same station during a previous shift. |

Bud thought the sushi was great and the prices seemed reasonable. 3/5/09 Sansei is only open for dinner. I had a productive phone conversation with Jason, one of the managers. He explained that they are experienced with food allergies. He said they know how to avoid cross-contamination. The chefs clean their knives and hands between each order. Patrons with food allergies should let the server know, and the manager will get involved. The manager will go directly to the chef and take responsibility for the safety of the meal. The sushi area does not use milk. There is some egg used in the batter recipes. Pine nuts are used in the vegetarian sushi. Macademia nuts are used in some rolls, and peanuts are served on the side with some rolls. The seafood menu has cream in some of the sauces. The butter sauce also includes egg. And 2 dishes use peanut oil. The fryolator is contaminated with macademia nuts from the tempora ice cream. D.K. | Hula Grill Waikiki 2335 KalaKaua Ave., Outrigger Waikiki on the Beach Honolulu, HI 96815 (808) 923-4852 3/6/09 Just had an encouraging phone conversation with Jeff, one of the managers. He told me they deal with food allergies usually a few times per month and will do whatever it takes to feed the allergic patron. He said they would even modify the menu if necessary. He used the example of cooking a plain chicken breast with pepper in a pan. There is some cross-contamination with the fryolator since they use it for the macademia nut wontons and the french fries. They want to know about your food allergies if you make a reservation. And they want you to tell your server about your food allergies when you arrive. They want to know if a small amount of cross-contamination can be very dangerous for a patron. They are open for breakfast (they even have simple fruit and cereal for those who can't eat eggs) and dinner. There is also a cafe menu for the Plantation Bar and Cafe at night, with live music from 7 - 9pm. There is hula dancing on Friday, Saturday and Sunday nights. For $14 he had a gigantic tasty lunch. He had freshly caught fish with mushrooms, onions and vegetables. |

Bud said the food tasted really good and they were good at helping him figure out what to eat, but he was a little disappointed that the fried foods were off limits for him. Many of their menu items are deep fried and they are not extremely rigid about what goes in each fryer. For example, when they are busy they might put fish in the fryolator that is designated for the french fries. He ended up having one of the specials which was grilled swordfish and shrimp. His food was cooked in a pan so he would not risk cross-contamination from the grill. |
