I spoke with the waiter before we placed our order. He explained that he and all restaurant staff at the resort are trained in food allergies and cross- contamination. Just as the front desk explained to me, he described the resort’s policy to enter guest food allergies into their computer system where the chefs of all the resort restaurants would be notified of the guest's food allergies. The sushi was some of the best that my husband and I have ever had. Tsunami Sushi is part of the Boat Pavilion Landing, so you can order from both menus for the same meal. There are Macadamia nut items on the menu and peanut butter and jelly sandwiches on the children’s menu. |

The first morning we were there, we stopped by to see our guest ambassador, and she handed us necklaces made from polished kukui nuts. I had no idea if there are tree allergy implications from the kukui nut so opted out of receiving the necklace. I was told that the kukui nut is the Hawaiian state nut and that it has healing properties. I was told it is used in some of their cosmetics and body lotions. I responded with my concerns that it might be an allergy problem for some guests. I talked to Casey, one of the night managers. He explained to me that this resort trains all of its restaurant employees in food allergies and cross-contamination. He recommended that guests mention the food allergies when making reservations, and to the front desk upon arrival. Also, a call to the front desk before you leave home will set the accommodations in motion. The employee at the front desk is trained enter food allergies into their computer system where the chefs from their many restaurants at the resort will be notified of your situation. I was told that it would take 30 minutes to drive to the nearest hospital, but an ambulance would be able to arrive at the resort in less time. I asked Casey if they had Epi-pens available for emergencies, or if there was anyone trained to use them. The Epi-pen question was answered Derrick Toleneino, the manager of security. Derrick told me that the paramedics are 6-7 minutes away. They carry epinephrine and are trained how to use it. Derrick wants to be contacted by, and meet anyone staying at the Hilton with food allergies. He wants to know who you are and to understand your personal situation in an effort to better serve you. Room 5314 in Lagoon Tower facing the ocean was terrific. The Hilton gave us a free upgrade when we asked to transfer to a new location from our original room. Both rooms were equipped with a dorm size mini refrigerator. Just below the balcony of our 5th floor room was the dolphin pool. We originally had a room in the Ocean Tower, but requested a switch since we wanted to be walking distance to the parking lot without taking the monorail. The room switch was seamless. The Hilton owns three microwaves that are available to guests upon request at this enormous resort. The front desk informed me that you should request a microwave when you make your reservation and let them know it's for food allergies. Call the front desk to make sure the microwave will be available for your room. |

We stayed in the two bedroom cottage which seemed clean and has a full kitchen. They have a woman who cleans the place, including the lower half of the walls, after each guest. There is a king in one room and a queen in the other. Because of the location on the Big Island, the running water is not suitable to drink. There is a water tank on the kitchen counter and bathroom counter with potable water for brushing teeth, etc. Children are not allowed to stay in the main house, so families are directed to reserve this cottage. The sisters who run the B & B do serve breakfast at the main house but they are NOT equipped to serve individuals with food allergies. There are cats on the property, but they are not supposed to go in the cottage. There are no guarantees what the guests do when the owners are not watching. The sunrise across the street was spectacular. |

I talked to Melanie, the manager, while we waited for lunch. Melanie told me that they don’t make their pesto sauce with nuts anymore because so many people are allergic to nuts. They do put cheese in the pesto sauce so that it would not be appropriate for someone with a dairy allergy. They serve people with allergies regularly and their chefs understand cross- contamination. For an example, they can saute or steam plain vegetables, offer plain white rice, and prepare a plain piece of fish or meat for someone with food allergies. |

This place is 15 minutes south of Kona. We stopped at Keei Cafe after visiting Green Sands Beach and the most southern point of the US. Following dinner, I talked to the waiter about food allergies. He told me the chefs understand food allergies. They are ready to meet special requests, but they are a small restaurant and therefore are not able to accommodate such requests during peak dinner time which is 6-7:30 p.m. He suggested patrons with food allergies should place their dinner requests from 5:00-6:00 p.m. or 7:30-9: 00 p.m. They are also open for lunch where you can enjoy a lovely view of the ocean as you dine. The owner is a personal friend of the waiter and works the other side of the floor during dinner. Keei’s two chefs have been cooking for them for the past 14 years. They do not accept credit cards. |

After dinner, I talked to Dave, the manager and bartender. Dave said they would do the best that they could to handle food allergies, but he didn’t think the food from his kitchen would be safe for anyone with a tree nut allergy. They use pine nuts and macadamia nuts in multiple recipes, so the nuts do end up in multiple locations in the kitchen. He was concerned with possible cross- contamination. |

Which, unfortunately, is now closed to the public. I scouted the store for items that looked like they might be free of milk, egg and nuts. Here are some of the items I found. Silk.
